Make Rhubarb Pie using Camping Cookware

outdoor treat.  Now I like to take rhubarb on camp outs and share a few stalks with the kids like smore’s.  Kids can’t resist sugar and although rhubarb is sour, kids love dipping it in sugar and eating it like a candy bar.  One really good treat you can make at your camp site is Rhubarb Oatmeal Pie.  Here’s the recipe.

Rhubarb Pie Filling Ingredients

3 cups chopped rhubarb (cut into small pieces)
1 ½ cups sugar
2 tbsp. cornstarch
¼ cup water
1 tsp, vanilla
2 Slices of Bread
Spray Butter
½ cup of Cinnamon mixed with ½ cup of sugar

Directions:

Combine rhubarb, sugar, cornstarch and water in a small sauce pan/pot at home before going to your campsite.  Cook and stir for about 10

minutes until the boiling chunks of rhubarb turn into a thick, creamy mixture.  Blend in vanilla then let the mixture cool in the refrigerator. Put the mixture in a Tupperware container and pack it in your camping cooler.  Spray each side of your camping pie iron cookware with spray butter or spray oil.

Spray butter on two slices of bread until the bread is fairly saturated.  Lightly sprinkle a little bit of the cinnamon and sugar mixture on the buttered side of each bread slice.  Use a butter knife or plastic knife to spread the rhubarb pie filling mixture on the plain side of each bread slice like you are making a jelly sandwich. Place the entire sandwich in the pie iron and clamp it shut.

Place the pie iron directly in your camping fire and let it sit for about 5 minutes then flip to over and let it set for another 5 minutes before taking it out of the fire and letting it cool for about 5 minutes.  Remove the rhubarb pie and EAT!
